1. Rou Jia Mo (Chinese Hamburger) 

Rou Jia Mo is a street food originating from the cuisine of Shaanxi Province and now widely consumed all over China. It was named Shaanxi Province's Intangible Cultural Heritage of 2016.  The meat is most commonly pork, stewed for hours in a soup containing over 20 spices and seasonings. Although it is possible to use only a few spices (which many vendors do), the resulting meat is less flavorful. Rou Jia Mo is considered the Chinese equivalent to the Western hamburger and meat sandwiches. In fact, Rou Jia Mo could be the world's oldest sandwich or hamburger, since it dates back to the Qin dynasty (221–206 BC). Highly recommended!

 

2. Liangpi (Cold Skin Noodles)

Liangpi is a noodle-like Chinese dish made from wheat or rice flour. It is a specialty dish originating from the cuisine of Shaanxi Province, but has now spread to many other places in China, in particular the northern and central regions. The sauce has various flavors - sour, sweet, or salty. You will reveal the mystery after trying it. Although liangpi is served cold, they are served in every season, including winter. 3. Beef and Mutton Soup with Shredded Cake (Yangrou Paomo)

Beef and Mutton Soup with Shredded Cake (Yangrou Paomo) is one of the signature dishes of Xi'an. With its fragrance few people come to Xian without trying it. How to eat it? You are supposed to tear the steamed buns into tiny pieces and put them into beef and mutton soup. You can eat it after the buns soaking for a while. Usually this dish comes with sweet crisp cloves of garlic, coriander and plates of chili. They are for refreshing your mouth after greasy mutton soup. Highly recommended!

 

4.  Hulatang (Spicy Soup)

Hulatang, also known as hot pepper soup or spicy soup, is a kind of Chinese traditional soup created in Henan Province but became popularized in the cuisine of Shaanxi Province. Chinese immigrants have introduced it to the United States, where it is known as "spicy soup". It can be divided into two different versions in Henan: Xiaoyaozhen version (from a town near Zhoukou City) and Beiwudu version. As its name — literally the characters 'pepper' + 'capsicum/chilli' + 'soup' — implies, capsicum and black pepper are put into the broth made by beef soup. You definitely have to try this one!

 

5. Qishan Saozi Noodles

Qishan Saozi Noodles' hometown is Qishan County in Xi'an. It has a long history. Since Qing Dynasty, the noodles have already got big reputation. Unlike other noodles, the Qishan Saozi Noodles are hand-made of good wheat flour which makes it tastes very good. Besides, there are several kinds of ingredients such as pork shreds, day lily, egg, wood fungus, and bean curd which are with flavors of various spices. The soup of the noodle is hot and sour, you may get addicted after you try it. You must give it a try!

 

6. Biangbiang Noodles

Biangbiang noodles, alternatively known as youpo chemian in Chinese, are a type of noodles popular in the cuisine of China's Shaanxi Province. The noodles, touted as one of the "eight strange wonders of Shaanxi", are described as being like a belt, owing to their thickness and length. Dishes with this noodle are often topped with lots of red hot peppers for the cold winter in Shaanxi.

 

7. Guokui

Guokui is a kind of pancake made from flour originating from Shaanxi cuisine. It is round in shape, about a foot long in diameter, an inch in thickness, and weighs about 2.5 kg. It is traditionally presented as a gift by a grandmother to her grandson when he turns one month old. The ingredients are bread and it tastes spicy. It is really famous and popular in Xi'an. Must give it a try.

 

8. Zeng Gao

Zeng Gao is a traditional snack for breakfast in central Shaanxi. It is made from glutinous rice and Chinese dates in a steamer which is developed from an ancient cooking vessel Zeng, hence the name Zeng Gao. Chinese dates have a lot of medicinal functions such as enriching the blood and calming the nerves and Zeng Gao has a strong flavor of Chinese dates and is soft, sticky and tasty. Zeng Gao is healthy and nutritious, you must give it a try.

 

9. Deep-fried Persimmon Pastry

Deep-fried Persimmon Pastry is a famous Xi'an street food. The cakes are made from a persimmon dough and contain different fillings like rose jam, osmanthus, ground nuts, black sesame, and red bean paste. After being flattened and fried, the skin of the cake is crispy while the inside stays soft and chewy, an addictive combination. You totally need to give it a try!
